Caramelized Onion Tempeh
Serves 3 to 4 | Prep Time: 45 min | Cook Time: 25 min
We donât all have the time or money to go to fancy restaurants. Not to worry, because Iâve provided this elegant recipe that will make you feel like youâre out for a nice dinner. The secret to preparing tempeh properly is to gently poach it in broth to eliminate its bitterness. I also add maple syrup, liquid smoke, and Worcestershire sauce to the broth to inject even more flavor. Served over a creamy cauliflower and sweet potato puree, this dish is worthy of the finest china!
Caramelized Onion and Shiitake Sauce:
2 tablespoons olive oil
2 onions, minced
¼ teaspoon salt
4½ ounces (125 g) shiitake mushrooms, coarsely chopped
2 cloves garlic, minced
¼ cup (60 mL) water
2 teaspoons maple syrup
1 teaspoon balsamic vinegar
Black pepper, to taste
Cauliflower and Sweet Potato Puree:
4 cups (375 g) cauliflower florets
3 cloves garlic, peeled and smashed
2 sweet potatoes (about 1 lb/450 g), peeled and diced
2 tablespoons nutritional yeast
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon lemon juice
Black pepper, to taste
2 tablespoons soy cream
2 tablespoons vegan butter
Tempeh:
1 cup (250 mL) vegetable broth
3 tablespoons soy sauce
3 tablespoons maple syrup
2 tablespoons olive oil
1 teaspoon garlic powder
2 teaspoons vegan Worcestershire sauce
2 teaspoons lime juice
2 teaspoons hot sauce, such as Frankâs RedHot
1½ teaspoons liquid smoke
1½ packages (each 8½ oz/240 g) tempeh
For the Caramelized Onion and Shiitake Sauce:
1. In a skillet over medium heat, heat the oil, then add the onions and salt, and cook for 15 minutes, stirring frequently.
2. Stir in the remaining sauce ingredients and cook until the liquid is fully absorbed, about 8 minutes.
